Vegetable Fried Rice |

Introduction
Along
with potato rice is staple sindhi food, at the most of
sindhi kitchens rice are cooked at least once in day,
hence you will find a good variety & style of rice
cooking in sindhi kitchen.
Vegetable friend rice is just not a typical sindhi rice
recipes but this also indicates the saving attitude of
sindhi community as in the large family this happens so
many times that a small quantity of uncooked vegetable
is left which bound to thrown away or to be used with
other fresh quantity, which might result in reducing
taste of vegetable. Vegetable fried rice not only save
this wastage but also helps in getting a very highly
healthy and tasty rice cuisine.
Cooking process of Vegetable fried rice is quite easy
and takes very less time. |

Ingredients
Cooked Rice 1 small bowl (for 2 persons)
1/4 cup each of Carrot and Capsicum, cut into small
pieces
You can drop carrot as this season vegetable and use
beans if both are available you both.
Small quantity of chopped cabbage [can use both Patta
Gobi and Gul Gobi] and 2 small onion
Use salt and pepper according to your taste and food
habits.
Very small quantity say about 1/2 table spoon of Vinegar
and Soya sauce
about 2 table spoon of Tomato ketchup
Some people also use small cubes of fresh tomato.

Cooking Process
 |
Take 1 table spoon of oil in in fry pan and heat for a
while. |

Add the copped vegetable like capsicum, beans, carrot
etc and heat for 4-5 minutes. |

Add Cabbage and keep on heating for another 2-3
minutes. |
 |
Add Sauce, vinegar, chopped onion, Tomato ketchup and
chopped fresh tomato. |
 |
After heating of 1-2 minute pour this over the cooked
rice. |
 |
Add remaining 1 table spoon of oil and rice in fry
pan, mix them well, on slow flame. |
 |
Decorate with chopped green coriander leaves and serve
hot. |
 |
A very few people also use very fine chopped dry
fruits like Cashew Nut for garnishing. |
